Sluggish under light load

I have a 2023 with a Cobb 93oct OTS tune, thermal 2.5 exhaust, and CVF fab downpipes (just in case any of that matters). She had an issue with one of the stock cats starting to fail, which I assumed was why the car was starting to feel sluggish under light load. I opted to changed the downpipes to CVfab, and after the install I reset the ECU and cleared the KAM. Afterwards, the car drove well, with crisp acceleration under all conditions. Unfortunately, now, after around ~100 miles, I'm noticing the sluggish acceleration has come back.
I understand the ECU will learn various parameters and the transmission will learn driving styles, and to be fair, most of my driving after the reset has been very light, short trips around town and in populated areas. Also, Under 1/2 and full throttle, there are no issues.

Did I accidentally teach my ST to be slow by driving like a granny after the reset, or should I be chasing other issues?

It very well might be the OTS tune, I’d highly recommend a custom tune. If you think its the adaptive transmission learning tables, you can reset those with Forscan.
