Yes, you will get the exhaust smell in the cabin every time you start the ST. Smelled worse than my 67' Camaro. The smell from flooring the gas pedal is different.

If it is a 2020 ST you will need to make sure that they replace the left side catalytic converter. This needs to be replaced on most of them. I had exhaust fumes in mine also. Dealer can expedite getting parts using the right procedure.

If you otherwise like the ST, keep taking it back to the dealer to get it right. And yes, they are required to give you a loaner or they have to pay for a rental. This is covered under the warranty just like repairs are covered. Ford will reimburse the dealer, no worries.

I would say the Ford all weather mats are the best rubber mats, but I recently just replaced the front ones with 3D Maxpider Kagu floor mats that I got from Autoanything. Not sure if they are the material you are looking for, but they look the best and fit nicely.

This is how I lock my ST because the keys always stay in it. You may also use your phone to lock it, as my wife does at nighttime.

My 2020 is white, same as paint. I did think they made them all black after MY20, but I guess not. The 2020 does have nicer looking roof rails, in my opinion.

Someone in another thread mentioned disconnecting a wire to the battery or a wire that goes somewhere that reads the battery voltage, as the start/stop feature does not come on when the battery voltage is low. Not sure if doing this would cause a host of errors.

They had to dismount the tires to do that, should have just gotten new sensors on your new wheels.
